PMFTC Inc. continues to offer a better alternative to legal-age nicotine users and has just launched the new TEREA Oasis Pearl. On January 17, 2025 (Friday), Chef Josh Boutwood served an exclusive private six-course tasting dinner at Helm (located at the Ayala Triangle Gardens in Makati City).

The culinary tour starts with “Tuna. Melon. Ginger,” a delicate layer of ube and lime over a sphere of melon juices, and ginger gel blankets fresh tuna marinated in soy and aged miso, paired with cantaloupe, honeydew, and watermelon. Subsequently, “Egg. Sweet shrimps. Butterfly pea” arrived. This chawanmushi is made with organic eggs, and the chef pairs it with sweet shrimp and pink oyster mushrooms. It is then finished with blue ternate juice that gracefully transforms into pink with a dash of hibiscus vinegar!

The third course diverts simply into “Bread,” which Chef Boutwood has undoubtedly transformed into something more extraordinary! Helm’s signature sourdough and brioche were served with various spreads: a tup of beautiful pink beetroot lard, black truffle butter quenelle, quenelle with Atlantic seaweed sea salt, and finally, a nutty and smoky whipped bone marrow butter.

Now, the mains! “Halibut. Roe. Celeriac” features lightly steamed Atlantic halibut served with celeriac puree and savory chicharon-like sea cucumbers and celery leaves. A bergamot mint butter sauce graces the dish, and a topping of Ikura or salmon roe adds a delightful popping sensation in the mouth with each bite, much like the bursting of flavor that comes with the TEREA Oasis Pearl!

Meanwhile, “Wagyu. Tasty paste. Ättika” showcases perfectly cooked Australian wagyu, boasting a crisp exterior and a tender, melt-in-your-mouth interior. This exquisite beef is paired with a flavorful fermented vegetable paste and a cooling ättika gel. Finally, the meal concludes with the refreshing and tropical flavors of “Passion fruit. Coconut. Mint,” a passionfruit sorbet paired with caramelized coconut cream, macerated kiwis, and mint crisp. Cue the applause!
