As the rainy season creeps in it’s become automatic for us to seek out comfort in a nice, warm bowl of soup. Often, our dilemma is choosing just one from a range of options because – let’s be honest – Filipinos make god-tier soup. Dude’s House of Kansi solves that problem by merging two Filipino favorites: bulalo and sinigang.

Kansi, a Western Visayan dish is a combination of bulalo and sinigang. Kansi is a beef soup, using the shanks and the marrow cooked until tender. It is cooked with Batwan, a souring agent that is abundant in Negros and Iloilo provinces. A bowl of this from Dude’s House of Kansi is the answer to the cravings you never even knew you had.

Dude’s House of Kansi also offers Kamto, which is cooked in the same base soup as Kansi but the part is more flavorful because it came from the belly portion of the beef. They also serve sizzling variations of both Kansi and Kamto.
