The traditional hotel breakfast buffet is served at San Diego. It is served from 6am till 10am. During our stay, the buffet featured a combination of American and Filipino cuisine.

PASTRY TASTING c/o Pastry Chef Philip Baltazar

Just a few hours after a full breakfast, we got to sit at San Diego once again, but this time, for a pastry tasting session! Chef Philip Dy Baltazar, a renowned pastry chef in the hotel and restaurant industry, just became the official pastry chef of Club Punta Fuego a week before our visit. He happily showcased his magnificent creations to us with much care for his work.

Chef Philip has served as a pastry chef for over 20 years for reputable hotels and resorts around the Philippines, including Sofitel Philippine Plaza, Mandarin Oriental, Tagaytay Highlands, Island Cove, and Astoria Plaza.

Aside from those accolades, he also underwent a specialized chocolate training in Switzerland, which explains how beautiful his Velvet Chocolate Truffle looked! Moreover, he represented the Philippines in an Asian Bread Competition in China, winning bronze in 3 categories: showpiece, artisan bread and laminated dough.

 

Creme Brulee

Similar to the Caramelized Cheesecake we had previously, the Creme Brulee had a crunchy thin caramel layer filled with an immensely sweet custard base. I suggest you share this with a friend. You might not be able to finish it all because of its delicious sweetness =))

 

Eruption Lava

Named as “Eruption Lava”, it is a plate which consists of moist decadent chocolate cake covered with sumptuous cream and topped with a ‘brandy snap’- which is made out of glucose and flour.

TRIVIA: The brandy snap material is said to be used by magicians as glass and the like in their tricks. 😉

 

Velvet Chocolate Truffle with Cacao Beans

This excellent dessert, a new offering by San Diego, provides beans that are REAL cacao beans. The shell is a bit hard, but once you crack it, the dark, luxurious and pure chocolate is there to greet you with open arms- its flavor ready to be tasted by your buds. Hmmmmm…….

 

Caramelized Cheese Cake served with Roasted Bananas

This beauty of a creation was the final act of our fantastic pastry show. The height of those ala-Maleficent sticks of caramel made this sweet showcase look even more delicious and with the varying levels of sweetness carried by the roasted bananas and the tender cheesecake, this dessert surely deserves a must-try recommendation!
