71 Gramercy Introduces New “Degustation Modern” Menu by Chef Carlo Miguel

Last week, I had the privilege to dine at Manila’s ultimate “PLACE TO BE” – non other than 71 Gramercy located at the 71st floor of The Gramercy Residences right at the heart of Makati City.

With only 10 tables in its dining hall and being fully booked daily, THIS place indeed needs no further adieu. I even confirmed (yes, this is confirmed) that you even need to reserve at least a week in advance only to be seated! WOW! Also, they follow a very strict dress code so be sure to show up looking your best!

For this special event, I had the privilege to be one of the 1st souls to try their new “Degustation Modern” prepared by one of Manila’s sought after chefs, Chef Carlo Miguel!

I’m a big fan of white wines particularly with Chardonnays. Can’t go wrong with a perfectly chilled glass of this to set you in the mood.


As for our palate opener, Chef Carlo Miguel served us with a slight salad made from mozzarella, prosciutto, alfalfa, candied hazelnuts with light vinaigrette along with these baked to perfection rolls. I loved it til the last morsel!

As for the official start of the course, we had Olive Oil Poached Salmon which was perfectly poached side by side with green apple slaw, horseradish and dill. I died. Impressive!

For the 2nd course, we had this refreshing serving of Crab salad made from hand picked swimmer crab with avocado mousse, shredded lettuce and gazpacho sorbet.

For the first of 3 mains, I had a plate of highly aromatic Porcini crusted Sea bass fillet with mushrooms, cauliflower purée and red wine jus. It was a real feast for the senses!

Next was chorizo and saffron, ultra tender and flavorful braised U.S. pork spareribs with roast garlic potato purée crispy jamon and peppers! Deliriously unforgettable!

 Then arrived a fancy plate of  organic honey glazed U.S. duck breast with onion & thyme purée rhubarb and hazelnuts. I’m not a big fan of duck but this sure made me interested in trying it more! I loved the play of flavors in my mouth. This was indeed a fun dish to experience.

For our sweet ending, they served their best desserts! I loved Chef’s version of the Italian classic Panna Cota and a perfectly done Choco souffle.

 After those plates of edible artworks by Chef Carlo Miguel, I felt it was one of the best most satisfying meals I’ve had in this lifetime.

I never thought 71 Gramercy would have such great tasting dishes. One of the rare moments where you just wanted to kiss the Chef for making such a masterpiece! Compliments to the Chef and his team! This degustation is something worthy to be savored and enjoyed. And the best part is that, I discovered it was only for around P1,800++/head and the other dishes in their menu were all reasonably priced!  And as for the service… topnotch!

If you want to impress your date, you definitely must take her here!  71 Gramercy, another MUST experience when in Manila!
