When in Manila, and you’re looking for a place with a relaxed yet classy and whimsical enough ambiance to let you enjoy a good talk with friends over great food and drinks, check out VYNE. The dishes here take on a surprising yummy twist with its presentation and taste.
From the makers of HYVE, the newest boutique restaurant and freestyle tapas bar offers world fusion cuisine and promises to tantalize even the most discerning of taste buds.
The playful artwork at the entrance is a good prelude to how playful the dishes are too at VYNE. Talk about urban cool and chill.
Activities line the walls up starting with Music Mission (Wednesdays), Board Games (Thursdays), The Dig (Fridays) and We VYNE (Saturdays).
Lotsa great wine and drinks available here too!
First off with the Breaded Cheese Balls (Php 600) which is assorted breaded cheese, truffle honey, fruit jam and pommery mustard.
The Prawn Ravioli Laksa (Php 270) is VYNE’s take on the SPICY Malaysian favorite. Served with prawn ravioli, crispy dried tofu and topped off with fried onions and bean sprouts. The soup is poured right before you so you get it fresh and hot.
The East Asian Salad (Php 370) is a very bold salad with Asian Slaw, Kimchi, Korean Rice Cake and Mixed Greens, topped off with Salmon Floss, with Sesame Dressing.
But the Apple and Bleu Cheese Salad (Php 285) is for the win with Granny Smith Apples with Arugula, crumbled Bleu Cheese, Cranberries and Honey Yogurt Dressing. Too pretty to photograph too!
What a great place to spend with friends.
One of the best-sellers is the Ramen Carbonara (Php 350) a signature dish of VYNE, This is Miso Cream Carbonara with Smoked Pork Belly, a shot of Shio Ramen Broth and finished with a Sous Vide Quial egg. This is something you’ve never had yet!
The Pan Seared Sole Fish (Php 420) is a dish in an herb emulsion with saffron risotto, cauliflower cream, sweet corn puree and roasted vegetables.
And now its time to get down to business – VYNE Burger (Php 550) is made of up a 200g all beef patty, foie gras, mushroom ragout and bleu cheese. Best served medium rare. And when they said it is a must try at VYNE, they weren’t kidding.
Steak – 600g (Php 2,500) is prime rib served with horseradish gremolata, beef jus, fried brussels sprout, coleslaw and potato fries. One of my personal tops too for VYNE. Perfectly tender. Great with wine. Also comes in 300g serving (Php 1,200) and 1000g (Php 3,800). We were 5 in the group and it was just right.
All this is amazing with great wine from their list. How about some Cabernet Merlot?
For dessert, Creme Caramel – Custard Garden – (Php 300) is creme caramel, matcha cake and chocolate truffles with an orange reduction gel.
And since I have been on a personal voyage to look for the perfect cheesecake, this was a surprise. Lemon Cheesecake – Citrus and Basil (Php 360) is lemon newyork cheesecake with lemon custard, topped with basil, chopped pistachios and meringue. Fun way to plate it too.
Executive Chef Jerome Orpiano says his cooking is spontaneously inspired, influenced by different techniques and interactive. All ingredients are prepared in the kitchen 100%. He uses both modern & classical techniques and even plays with no-focal points for the plating. Now that’s why the dishes here are surprising. He works hand in hand with none other than celebrity chef Rob Pengson.
Outside you can step out for fresh air and a feel of the city.
