Sunshine Kitchen – A Ray of Sunshine in the Kitchen

Then, there was pasta and paella. We were able to experience Sunshine Kitchen’s Pasta Negra, which is a dish whose noodles are tinted with squid ink. It has white cream sauce embellished with shrimp, squid, and snapper.

The Cabanatuan Longganisa Paella with Two Fried Eggs is a Spanish rice cuisine that comes with a Pinoy twist. This scrumptious dish from Sunshine Kitchen is a blend of sour and salty since it is cooked with tomatoes and topped with broken off Cabanatuan longganisa. This dish is heavy and really filling.

Just when we thought that was the end of dinner, out came their artisanal pizzas. Artisanal pizza comes fresh from the wood-burning oven. It has a super thin crust yet kept chewy and crispy. We were able to sample the Porchetta pizza and the Mixed Mushrooms with Quail Eggs pizza.

We enjoy both pizzas. The Porchetta pizza has roast pork, herbs, mozzarella, grana padana, arugula, and garlic oil. The pork has a hint sweetness that made this pie really interesting.

The Mixed Mushrooms with Quail Eggs pizza has white sauce, mozzarella, ricotta, grana padana, and quail eggs. This looks like the pizza that you would gladly have even for breakfast.

We ended dinner with a sweet note, literally. We had a serving of ice cream that you can rarely find even in the biggest of grocery stores, the Key Lime Pie Ice Cream. It was a perfect match of sweet, sour, and cold.

Sunshine Kitchen is a brainchild of Chef Tanya Chua. When asked where the name was inspired from, she said “I named the place Sunshine Kitchen after my 2 year old daughter because I call her Little Miss Sunshine. So I wanted a name that was something to that effect, and of course I also wanted a place that would attract good vibes.”

I think she’s on the right track with the name.

When in Manila, there is definitely sunshine in this kitchen, day or night, lunch or dinner. So, why not check out Sunshine Kitchen?
