People tend to have a soft spot for delicious breakfasts. It is, after all, the most important meal of the day. However, with all the well-known brunch spots being down South or in the Makati or Taguig area, a lingering question hangs in the air: what’s a good choice for people who live up North? Well, look no further because this feature will introduce a new breakfast haven for those living in the QC area.

There’s a certain warmth that is exuded at Chef Paul’s. The floor is decorated with wooden planks that offer an elevated seating area and walls that are lined with sheets of song hits yellowed with age. Bean bags are placed across repurposed tires turned into tables, and vinyl records are hung against the windows. In a nutshell, it’s what I imagine my dad’s hideaway would look like if he would turn our garage into his own little nook.

Although most up-and-coming breakfast spots carry a plethora of items in their menu, Chef Paul’s offerings are tied together by a single theme, or more specifically, a love for waffles. Each dish incorporates the early morning favorite, whether it’s in its classic waffle and syrup form or in a downright surprising combination of pasta and waffles.

 

Case in point, Chef Paul’s Original Spaghetti Bolognese (P150).

An intriguing twist to a classic pasta favorite. The meaty spaghetti is well-suited to the Filipino taste, but packs a stronger flavor because of the herbs used. The carb load doubles with the waffles, of course, but hey, who’s complaining? The extra calories are bound to get used up as the day progresses anyway.

The Duo Nachos (P100) are a sight to behold. It’s a mountainous dish served with a generous heaping of toppings. The chips themselves are homemade and have just the right amount of crunch and yield for the toppings. Did I forget to mention that the nachos are refillable, too?

Phew! The name of the dish is quite a mouthful. Honestly speaking, though, this dish was the star of the afternoon during my visit to Chef Paul’s. There’s an intricate balance of sweetness from the French Toast Waffles doused in syrup and the savory with a hint of spice flavors of the Mexican Beef Omelette. In my opinion, it’s a definite A+ dish and I wouldn’t mind waking up to a plate of this every day.

It’s not often that you come across a breakfast den in Manila with appetizing dishes as unique as its repurposed interiors. So, if you’re ever around the QC area, I suggest giving Chef Paul’s a try. It’ll be a feast for the eyes and for the tastebuds!
