Elote Mexicano (P180)

Nothing beats the authenticity of street food. As I have learned over the years, great food can be found in the most unassuming places. Take for instance Elote Mexicano, which is inspired by Elote (corn on the cob), a popular street food in Mexico.  The dish takes some tips from the Elote, but drastically enhances its flavor and sophistication. Unlike its predecessor, the Elote Mexicano is served croquette style encrusted in goat cheese feta and cilantro, and lightly coated in chipotle mayo, truly making the dish come to life.

Indian Butter Chicken (P420)

Indian food is famous for its complex blend of curries, exotic spices and other pungent ingredients, which are unlike anywhere else in the world. This is probably why the Indian Butter Chicken became my personal favorite. The dish consists of a clump of tender chunks of chicken buried in a mixture of yogurt flavor and toasted almonds. The combined flavors of the dish showcase its unique depth of flavor that is both rare and unexpected.

You eat it with the pita bread, which is dipped and drenched in the delicious concoction. This may get quite messy, but you will forgo that beautiful mess once you’ve had a taste. When you stop caring about the sauce in your fingers, you know it’s good!

Spicy Coco Mango Pasta with Pinipig-Crusted Fish (P320)

If you’re looking for a spicy yet perfectly healthy meal, this pasta is perfect for you! The dish is lathered with coco-laksa sauce, which will satisfy your spicy yet savory coconut cream cravings. Not to mention, the parrot fish that is crusted with green pinipig and ripe mangoes, which add a rich depth to the already spicy dish. The coffee is brewed through the pour over method, which ensures the coffee’s maximum flavor and brightness. The bitter concoction is sourced and fairly traded from our very own Benguet Farmers. It is freshly-roasted in small batches and ground right before it is served.
