This Humongous Tuna Panga will ensure that your mouth produces saliva 10x more than the average human being. Just the smell of it will make your nostrils 5x bigger. And once it hits your mouth, you’ll just go crazy. Even though this is a big fish, they cook it as tender as when your mom used to comfort you when the bigger kids bullied you in school. When I took my first bite, the juiciness exploded right inside of my mouth, and it tasted so fresh. It goes great with the house blended chili sauce, barbeque sauce, and soymansi. Perfect with beer or plain rice, or since we’re Pinoy, even both!

Food for the gods as we called it when it was presented to us. It was as big as yo mama’s… Kidding! All jokes aside, this is one big Tuna belly that could feed a whole family. Tender, savory, flavorful meat, evenly cooked. Plus, since it’s the belly part, the juiciness is just indescribable. The house blended chili sauce, barbeque sauce, or soymansi works best with this one.

A Classic drinker? Or maybe just a raw fish lover? Either way, you’ll love this kilawin recipe of Hoy, Panga! Freshly diced Tuna with cucumber, singkamas, pepper, leaks, and just the right splash of vinegar. When I first tasted this, it was a complete trip of nostalgia. It has this sharp taste that reminded me of family gatherings and happy feasts. Pairing it up with a beer is just marvelous.

A perfect dish for a rainy day. Paired with hot rice, the sun will shine through those gloomy clouds almost instantly. The tuna doesn’t break into flakes in the hot soup. It has enough sourness that goes perfect with the rice.

Another unique thing about Hoy, Panga! is that they make their own kitchen equipment. This applies to all of their branches even those in Davao. They also use ceramic briquettes instead of the usual charcoal. Ceramic briquettes can actually spread the heat evenly onto the tuna while it cooks to produce a quality, non-burnt, fully cooked product.

They are also planning to add more goods from Davao as they would like to bring a real Davao experience through their food.

Jako reiterated that they aim to further develop their restaurant through the suggestions of their customers, the same way that they keep improving their YouTube channel. As such, we can definitely expect a lot more from Hoy, Panga!
