Love Ube and Cheese? Then You’ll Love this Palitaw Recipe

Ube and cheese are all the rage. That’s why you often see this dynamic duo in ice cream, cupcakes, and most recently, pandesal. This time around, ube and cheese make their appearance in another popular Filipino dessert: palitaw. A flat rice cake that resembles mochi, palitaw is a soft and chewy dessert that is easy to make.

For this, Herlyn Calabio of @hungryherl shares her recipe for Ube and Cheese Palitaw, a creative twist on a classic, and a sure crowd favorite.

Ube Cheese Palitaw Recipe

Ingredients

  • 1 cup of glutinous rice flour
  • 1/2 cup of water
  • Cheese, cut into cubes
  • Sesame seeds
  • Sugar
  • Shredded coconut
  • Ube flavoring

Procedure

  1. In a pan over medium heat, toast your sesame seeds until lightly browned and fragrant. Set aside.
  2. Form your dough by mixing your glutinous rice flour, water, and ube flavoring together in a bowl.
  3. Scoop out a tablespoon of dough and roll it into a ball. If the dough keeps sticking, wet your hands in-between shaping.
    Repeat with the rest of the dough.
  4. Press the middle part, place a cube of cheese inside, and roll back into a ball.

    Do the same with the others.

  5. Boil water in a pot. When it reaches a rolling boil, carefully drop in your palitaw and let it cook for about 2 to 3 minutes. Make sure not to overcrowd.
  6. When it floats, remove with a slotted spoon. Let the excess water drop out, then roll in the shredded coconut while it’s still warm.
  7. Top with toasted sesame seeds and sugar. Enjoy!
