This is how you can make “bread” with no yeast and no kneading needed

Plus, it’s low-carb, gluten-free and grain-free!

During the quarantine, people have started getting creative in the kitchen— whipping up Dalgona coffee, making tuna pies out of bread, or even just baking bread. I have to admit it’s really fun to watch and drool over the pictures afterwards.

What if we told you there’s a way to make bread with no yeast and no kneading needed? That “bread” is called Cloud Bread, and it’s all over Pinterest and Instagram.

Cloud Bread made its first appearance in the ketogenic community because it was a low-carb alternative to bread. It’s low-calorie, gluten-free, and grain-free, too. That’s why weight- and health-conscious people and those undergoing a ketogenic diet make this. Let’s be clear, though— it’s not actually bread at all. It’s an alternative that’s used the same way as bread. Compared to bread, Cloud Bread has a light and fluffy consistency, and a notable eggy taste (only because it’s made of eggs).

To make Cloud Bread, you only need three ingredients: eggs, Cream of Tartar, and cream cheese or Greek Yogurt. Although you don’t need to knead it, there is a lot of whipping involved in order to achieve a stiff mix that can hold up well when baked.

Here’s how to make Cloud Bread based on a recipe by Buzzfeed Tasty:

Ingredients

  • 3 eggs, separated
  • â…› teaspoon cream of tartar
  • 3 tablespoons cream cheese, softened, or greek yogurt

Procedure

  1. Preheat oven to 300°F (150°C).
  2. Separate the eggs into two bowls.
  3. Add the cream of tartar to the egg whites and whip into stiff peaks.
  4. Add the cream cheese or yogurt into the yolks and mix until combined.
  5. Fold half of the egg whites into the yolks until just combined. Add the rest and fold again until incorporated.
  6. Line a baking sheet with parchment paper and place six dollops of the mixture on the tray.
  7. Spread out the circles with a spatula to about ½ inch (1 cm) thick.
  8. Bake for 30 minutes or until golden.
  9. Allow to cool for at least 1 hour.

Tip: to mask the distinct egg taste, add salt and pepper or your choice of seasoning— Italian Seasoning, garlic powder… you name it!
