Chichon from Tarlac: Crunchy on the Outside, Juicy in the Inside

Litson Camiling, better known as Chicharon Camiling, is a special delicacy in Camiling, Tarlac. Some people refer to it as the juicy cousin of Lechon Kawali and Vigan’s Bagnet because that is exactly what it is. While it comes with the same crunch and deliciousness of the aforementioned food products, Litson Camiling has more juice in it, making it feel more meaty to the taste.

It is this particularly special lechon that Chichon specialises in. Chichon is a store in Filinvest, Quezon City, the name of which stands for ‘Chicharong Lechon’. They basically specialise in pork belly that is deep fried to perfection. I absolutely love how incredibly crunchy it is on the outside, and how surprisingly tender and juicy it is in the inside.

When you order it from Chichon, it comes with the perfect type of sauce that consists of bagoong isda with vinegar, calamansi and tomatoes. I loved it so much when I first tried it, I ended up making sure my family got to taste it, too.

Unfortunately, they had already eaten by the time the Chichon arrived; but even after re-frying it the next day, it did not lose its outer crispiness and inner juiciness at all! Amazing!

It therefore isn’t any wonder why Chichon offers their products for takeout, as well. It is one of those surprising food products that won’t go bad, even if it serves as leftovers the following day. I would highly recommend trying it yourself!
