Cantabria is the newest food outlet at The Westin Manila, also one of the new premium hotels in the Ortigas. This new restaurant is located on the roof deck of The Westin Manila, offering guests a view of the city. The sophisticated space is decked out in stunning terracotta-colored walls, elegant furniture, and stunning framed photos of the picturesque coastal province of Cantabria.

Cantabria’s menu specializes in many Spanish-style seafood dishes, setting it apart from many Spanish restaurants in Metro Manila. You can also expect the classic Spanish dishes at Cantabria, but you can’t just pay a visit to this new Spanish restaurant without enjoying the special seafood creations of Chef Chele Gonzales.

There’s no better way to start a feast than with a tantalizing appetizer of many flavors—such as the Tartaleta de Viera, a delicious scallop tartlet with celeriac puree, white chocolate, and caviar.

Once you’ve had your fill of this appetizer, then you can indulge in Cantabria’s Ostra de la Casa—super fresh oysters with a tangy yet refreshing sherry mignonette, green apple, and chives.

For tapas, make sure to try the crowd-favorite Chili Crab Croquetas con Mayonesa De Lima. This dish features massive deep-fried chili crab croquettes oozing with rich flavor, also made creamy with lime mayonnaise. There’s a reason this is a bestseller!

Another must-try dish is the rich and creamy Ravioli de Carne Guisada con Espuma de Parmesano. This beef ravioli dish is bursting with flavor with each bite, and the richness of the parmesan espuma will have you wanting more and more.

Of course, Chef Chele Gonzales has to shine the spotlight on the best of what his hometown has to offer. So, one of the main highlights of Cantabria’s menu is the Rodaballo a la Parilla, or the grilled whole wild turbot.

This was also the main highlight of the whole Spanish seafood feast for me. The fish is so perfectly grilled and seasoned that it easily melts in your mouth. And if you love fish fat (a.k.a. bangus belly) as much as I do, you’ll enjoy this grilled wild turbot. It’s practically oozing with collagen, making it quite an indulgent dish.

Of course, it’s also worth noting that wild turbot is such a rare fish to find in restaurants, so grab your chance to enjoy it at Cantabria.
