Crafted in collaboration with Kalel Demetrio, one of the country’s most celebrated mixologists, and Uma Nota’s very own Benjamin Leal, this special menu captures the essence of three cultures in seven unique concoctions. Here’s what’s shaking behind the bar:

Matsuri do Verão — A fizzy, joyful tribute to Japan’s summer festivals, made with Japanese gin, lemon, ginger-honey, and topped with lychee foam.

Tropic Samurai — Tropical guava meets botanical gin, habanero honey, basil, and celery bitters. Sweet, spicy, and balanced.

Kampai do Coco — Vodka, sake, coconut liqueur, and tonic combine for a crisp, clean toast to sun-kissed days.

Yuzu Nisei — Yuzu, cucumber, elderflower, sake, and vodka for a light, floral, and elevated sip.

Yakuza Verde — Green mango, guyabano, tequila, mezcal, and aloe vera with a smoky edge. Bold and tangy.

Kyoto Ceremony — A refined mix of tequila, sake, pandan, tarragon, and matcha for a graceful, grounding experience.

Ube Ipanema — A Filipino-Brazilian indulgence with ube cream, bourbon, coconut-pandan rice milk, and citrus foam.
