How to Make the Cronut Fillings?

 

Depending on the filling that you plan to use for your cronuts, there are various ways to prepare them. During the demo, Chef Marc how to use white chocolate and orange juice for different fillings. The final cronuts had 3 fillings – pistachio, strawberry, and orange (pineapple juice can also be used).

 

For the chocolate filling (used for pistachio and strawberry):

 

1. Boil cream in a pot.

 

2. Remove boiling cream from heat and melt white chocolate in it.

 

3. Add coloring and flavoring (for pistachio and strawberry).

 

4. Let it cool.

 

For orange filling:

 

1. Boil orange juice in a pot.

 

2. While waiting for juice to boil, mix sugar and flour in a bowl.

 

3. Add heated juice on the mixture and continue cooking for a minute.

 

How to Make the Cronuts?

 

After letting the dough rest for 12 to 24 hours, it is now ready to be used in creating the cronuts.

 

1. Cut the dough using a doughnut cutter. Make sure to plan out the way you cut to have the least waste.

 

2. The excess dough can be used for as an addition to another batch.

 

3. Place the cut dough on a tray and let it rest for about 1 to 2 hours. Make sure to leave space for the dough to rise.

 

4. After 2 hours, fry the dough on a deep fryer set to 170 degrees. Fry for 1 to 2 minutes per side.

Fry the dough.

 

5. Remove cronut and pat it dry using a paper towel.

 

6. Once cooled, cut the cronut into two. Put the desired filling.

7. Glaze it on top and add garnish. Serve.
