New World Makati Hotel’s Bar Rouge is unlike any bar I’ve been to in Makati City in that it feels more like a lounge-speak easy bar with its intimate and cozy atmosphere. Every now and then, it’s nice to just hang out and lounge about with friends locked in conversation rather than having loud music blasting at the background, don’t you agree? Well, this is exactly what their Hennessy Nights have to offer.
New World Makati Hotel’s Bar Rouge also has the feel of a gentleman’s bar with fresh handrolled cigars for our smoking friends and there is also humidor if you’re not able to finish yours.
A function room is also available equipped with a large screen TV in where your company can enjoy major sporting events or live pay per views.Â

Chicken skewers, fish empanadas and quiche are there to accompany the Hennessy cocktails to be served, as well. As far as I know, these are not a part of the bar’s menu. However, they are still delicious, especially the chicken skewers (I asked for more of those a couple of times).
For the curious, cognac is a variety of brandy, which is produced in a different and controlled manner. The production methods of it need to meet certain legal requirements to bear the name Cognac. Hennessy Cognac happens to be the biggest cognac house in the world and they masterfully distil this sweet nectar in their Hennessy V.S.O.P.  Privilege Collection 4, giving off hints of vanilla, cinnamon, honey and licorice and finished off with a subtle fresh grape flavour. Bar Rouge offers 4 different ways to enjoy it!
The stars of Hennessy nights would be Hennessy with ginger ale (left), Hennessy neat (right), Hennessy with cranberry juice (back) and Hennessy on the rocks (not shown). Price ranges from PHP375 for the Hennessy V.S, PHP525 for the Hennessy V.S.O.P to the pricier PHP850 for the Hennessy X.O. and up to PHP7418.75 for a bottle.
Fun fact: V.S.O.P. means “Very Special Old Pale”.
I knew it would be a challenge tasting all of the 4 drinks in one night, but I was definitely up for it. I started off with the mixed one as it introduces the most fashionable and popular way of enjoying Cognac at the bar scene. I really enjoyed the Hennessy with ginger ale. It tastes like malty and strong shandy and it is something I would recommend for someone who wants to just chill and enjoy the night. The Hennessy cranberry cocktail is another way of enjoying a mixed drink with its sweet, sour, fruity and bitter notes. Another way to enjoy cognac is with ice. However, since cognac is a variety of brandy, it might lose some of its delicate flavors when watered down over time by the ice.
The traditional way and most manly way to drink cognac, though, would be through Cognac neat or without ice. This is probably the best way to enjoy traditional V.S.O.P. Cognacs, especially when you just want to unwind and relax while enjoying your friends’ company and listening to the tunes of the DJ in the background.

When I ended the night with my 6th drink and my nth chicken skewer, I wanted to stay a little bit longer to relax and unwind even further after a full week from the office. Bar Rouge is a bit of a refuge for me now. In fact, I wanted to stay until brunch since their US prime roast beef has my name on it.
