Chinese Food has been a staple for Marriott Manila since the arrival of Law Wui Wing in 2014. As Marriott Manila expands with their West Wing and the Sky Bridge to Marriott Manila’s Grand Ballroom, they also open one of the most sought-after restaurants in Manila.

Man Ho is on the ground floor of Marriott Manila’s West Wing. It can sit couples to big groups in the main area or through their 4 private dining areas.

WhenInManila.com got a chance to chat with Chef Law, who has been cooking in Chinese kitchens since he was 15 years old and has worked for the best restaurants in Hong Kong and Japan before becoming the Executive Chinese Chef of JW Marriott Hotel in Shanghai, Pearl Restaurant at Beijing Marriott Hotel City Wall, Marriott China Hotel in Guangzhou and, finally, Marriott Manila.

Marriott Manila steps it up a notch with the opening of Man Ho where lunch and dinner a la carte will be served. The menu consists of Cantonese dishes like the deep fried boneless chicken, fried rice with chicken and salted fish, beef fillet and black fungus with ginger and leeks, sauteed porcini mushrooms, and braised seafood soup with caviar.

Aside from the staples, there is also a selection of unusual dishes, like the deep fried bean curd with spicy salt, marinated fungus with black vinegar, smoked duck breast with mango and Peking duck with Chinese pancakes.

Man Ho in Shanghai was named one of the top 10 Cantonese restaurants for three consecutive years by Shanghai Modern Weekly before it officially expanded to Manila with none other than the best chef, Chef Law Wui Wing.

For the starters, I particularly love the Smoked Pompano, which is the right blend of sweet and salty. This is definitely a must-try if you are a big fan of seafood. The outside is sweet, crispy and a little salty at the end; but the inside is generally really tender.

What’s a Chinese restaurant without tasty dumplings?

Made by Dimsum Chef Du Wen Bo, Man Ho’s dimsum offerings are only cooked once ordered, so you won’t have to worry about their freshness.

Many people judge a Chinese restaurant by its dimsum and the Siao Mai at Man Ho is definitely a must-try. It is really tasty and unlike many that are sold locally, these are made only of the finest ingredients.

It’s also a plus that it is served steaming hot, giving you the whole dimsum experience.

Har Gao, or Hakaw to most, is my favorite dimsum of all time. I have tried top Chinese restaurants that serve this and Man Ho is definitely one of the best. The wrapper is not too thin or too thick and after a bite, you will almost instantly get to the delectable shrimp filling.

Also popular in Man Ho’s menu is the steamed chicken feet. Unlike ones I’ve tasted before, this one is more flavorful. The sauce is a little similar to sweet and sour fish or pork, another highly popular dish in Chinese cuisine, as well.

The star of the show, though, is Man Ho’s Hong Kong Style Roasted Goose. The difference between chicken, duck and goose is how it can trap the flavors within. I also think the latter is fattier, making it much tastier.

Chef Law explained that they fan-dry the goose before they pop it in the oven – maybe that’s the trick!  By drying the skin, it gets a better crisp outside. The meat is also tasty because the goose is stuffed with fresh herbs and spices.

The Seafood Tofu with caviar is one of the best dishes I’ve tried at Marriott Manila. It is a wonderful combination of shrimp, squid and scallops with tofu and caviar in the middle.

My favorite from everything that was served in Man Ho is the Beef Tenderloin with Bell Pepper in Black Pepper Sauce. The beef is super tender and almost melts in your mouth. The simple black pepper sauce compliments it perfectly, highlighting the richness of the meat.

Though we have tried the one with pumpkin sauce, the Poached Boneless Wild Garoupa is also served at Man Ho with steamed rice and soy sauce.

Eaten by itself or with all of the delectable dishes served before it, the Fried Rice with Beef and Egg is something every Filipino will love because we can’t live without our rice. There is also a variety that you can choose from, like the Fried Rice with Chicken and Salted Fish (also a must-try!).

End your delicious meal on a sweet note with the Western Dessert combination, which is served on this cold stone slab. The left side is molten chocolate lava and the right side is ice cream. It is beautifully decorated with nuts, cream, raspberries and chocolate branches that are super tasty and best eaten with both the cake and the ice cream.
