I went to the Global Academy Alabang culinary school open house on May 31, 2014 because I heard that my ultimate chef crush would be there, Chef Rob Pengson. He’s really good-looking! He is a graduate of California Culinary Academy and has a degree in entrepreneurship from the Asian Institute of Management. Now he leads some of the finest restaurants in Manila, including The Goose Station, Hype, Vyne,  Hungry Hound, Niner Ichi Nana, and Olive Tree Kitchen and Bar.

Global Academy’s co-founder, President and CFO is Chef Benjamin Ledesma Jr. He took up a Bachelor’s Degree in Restaurant Management and studied Culinary Arts at Le Cordon Bleu, Australia. He obtained his unbelievable achievements and success in the food industry when he worked at Westin, Hilton and Rushcutters Bay Hotels in Australia.

With these two onboard, you’ll definitely know you’re on the right track!

It was really nice to listen to great cooks like them. Chef Rob said that one thing that makes Global Academy different is that they do not just teach students how to cook nicely, but they are training students to expand their palettes to create a higher capacity of creativity and style. Turning the simplest dishes into unforgettable dining experiences!

He then expressed that with Global Academy, they teach students to develop and be original. He mentioned that there are a lot of good schools and good cooks here in the Philippines, so there’s a lot of competition, but then they teach their students to stand out from the competition.

He shared that we can get inspiration for the dishes anywhere, like turning a simple adobo to a modern and classy dish or turning the traditional Bistek Tagalog to a contemporary and refined cooking. We just need to make sure that the money of our customers is paid with good food and unforgettable dining experience! “Dapat sebo pa lang, ulam na!” said Chef Rob.

We must act according to our inspiration because no matter how great our ideas may be, there will always be someone better and greater than us. The difference between Global Academy and other culinary schools out there is that they take action and come up with an idea that will produce a globally marketable product. Chef Rob ended his talk with this quote, “it’s not in the car, it’s in the driver.”
