This quarantine period made me fall more in love with bread, especially after seeing so many friends share their baked creations online. And since I’m no baker (and I’ve yet to personally partake in this trend of learning how to bake my own bread in the kitchen), I’m content with just having homemade loaves delivered right to my doorstep. Focaccia Manila specializes in creating beautiful “gardenscape” focaccia bread that will make your jaw drop (it did with mine)! Initially sent out to friends and family as a care package, these artistic creations gained so much traction online that there was no way they couldn’t have launched an online store to sell them to the public.

“Just look at the designs of our bread and you’ll see how ours are different from the others,” they told us. “Each bread has its own unique design. You may also order custom designs with names and messages. We do “Birthday Breads” as well!” The best part? They’re vegan!

More Than Focaccia (or The Foc) is a concept bakery by Camcas Cervantes and Jake Pabelic that sells homebaked focaccia and foc-based comfort food. It started as a quarantine project of the two who wanted to perfect Cam’s favorite bread.

“The Foc allows you to indulge in sinful comfort food, but with the savory, elevated twist of a healthy focaccia base,” they share with us. Their menu features their classic rosemary focaccia bread, sandwiches, on-the-go loaves, and pizzas that are such treats to indulge in! Their range of products is currently still expanding, so keep an eye out for new items!

La Focacceria Manila is all about bringing the focaccia italiana home to Manila. Owner Carissa was based in Milan for three years prior to moving back home last June due to the pandemic. Thanks to her friends who shared their family recipes for pizza- and bread-making, she was able to recreate the oven-baked goodness she misses the most.

“We promise to stay true to the Italian taste – both in terms of the bread itself as well as the flavors. The focaccia we serve has both l’altezza (height) and la morbidezza (softness) typical of focaccia italiana. The flavor combinations were selected and brainstormed together with my local Italian friends because I want to be certain that what you’ll get in Manila is the same as what I used to have in Milan. The lockdown has us all stuck at home and unable to travel for now, but at least you can have a taste of Italy with our focaccia!” Carissa shares.

DoughLuscious Focaccia started mid of July 2020. It was born out of owner Lucy Collada’s love of bread and her desire for a kind of focaccia that suits her taste with “fun” flavors.

Owned by Miguel Santiago, this bakeshop started with the goal of making artisanal bread accessible to most. Their focaccia bread, among many of their other delightful baked creations, is a cut above the rest for the fact that it’s been tried and tested by chefs and foodies for the past three years. There are no disappointments here, no matter what you choose to indulge in.

Kalore started out as simply a Focaccia bread that owner Diana Pile enjoyed baking for her family as a way of showing her love and appreciation for them while in quarantine. The name comes from the Italian word ‘calore’ which means ‘heat’ — a testament to Diana’s belief that food is always best served hot and fresh, just like her focaccia bread!

Diana also takes pride in the versatility of her focaccia, which is lovingly handmade with quality ingredients and topped generously with mixed herbs and Maldon Sea Salt flakes. “As recommended by my dad, it’s even better when you have Extra Virgin Olive Oil, Balsamic Vinegar and Freshly Grated Parmesan cheese to dip your bread on. Some also enjoy it with simply butter or a cream cheese spread,” she shares with us. “My personal favorite is making the Focaccia into croutons to place on top my mom’s best tasting pumpkin soup!”

Bread at Burgos is a family run business focused on developing healthy baked products to promote clean eating. The family started out as a franchisee for a popular local mass-market barkery in 2002, then switched to selling healthy bread in 2007, before eventually creating their line of “clean breads” in 2017, consequently laying the foundation for Bread at Burgos.

Their products have no preservatives, no additives, and no artificial coloring, and make use of unbleached wheat flour, sea salt, raw sugar, antibiotic-free eggs, coconut oil, and fresh produce. “We’ve been in the industry long enough to know the “shortcuts” and we make sure to avoid them. And during this time, while there’s no vaccine or cure, we want to be the reminder that food is medicine,” they shared with us.

They offer regular focaccia bread and, my favorite, the vegan flower focaccia which features tons of fresh toppings of fruits, vegetables, and herbs. In-house deliveries can be arranged for those living in Quezon City, Marikina, Mandaluyong, Pasig, San Juan, Makati, and Taguig. Otherwise, buyers can book via third-party couriers.
