Carolina Q Ribs is a spin-off of Big Daddy Jay’s All-American BBQ. They had to rename as they are now online and their marketing approach has also shifted to focus on social media. Their area of expertise remains in smoking meats. They follow the same process of dry rubbing and six hours of smoking the ribs in their custom-built smoker. As such, their best seller is their BBQ ribs. They offer full slabs of smoked pork ribs that are fall-off-the-bone, as well as other items from their former restaurant. If you want freshly smoked ribs, you need to pick it up on their smoking day between 5PM and 7PM. On other days, their ribs come frozen. Still, since the ribs are thoroughly cooked, simple thawing and heating will be needed. Instructions will be provided, so don’t worry.

Maxie’s of Maxie’s Catering was derived from the commonality of their cousins (Cams, Tin, and Steph) whose middle or last names are Maximo. Due to the pandemic, they decided to put up a food business for added income and what originally started as a silog line has since involved into wings and ribs. Their BBQ ribs are homemade and made from scratch, including their hickory sauce, and takes at least 30 hours to prepare. And we just have to say it: their sauce is AMAZING!

When the owners’ main business was heavily affected by the pandemic, they ended up with a lot of time in their hands and decided to help those in need by sending them food and drinks. A month in, they realized that things might take a while to normalize and turned to social media to offer orders for their baby back ribs. Fortunately, orders started coming in and they decided to offer batch food deliveries to Metro Manila every Sunday and in Tagaytay daily. Their recipe was inspired by a restaurant that the owners visited in Bali, Indonesia a few years ago that was famous for their ribs. Road 20 Smokehouse started at its namesake, Road 20 in Quezon City, when Jezen Magundayao was stuck at home entertaining clients online and via phone. Missing the taste of bacon, he decided to make beef bacon at home because his whole family no longer ate pork. As he started smoking bacon, his wife introduced him to Texas-style ribs and brisket. After trying it out, he loved it and searched for the best locally available beef to support fellow local businesses and farms. He found Kitayama Wagyu: Japanese prime cattle bred in Bukidnon comparable to Australian Wagyu. Using Kitayama Wagyu, Road 20 Smokehouse creates handmade artisan beef bacon and Texas-style beef ribs and brisket cooked for hours without any shortcuts. While a lot of other ribs are baked, theirs is smoked for hours to get that distinctive smoky BBQ flavor. You can buy their products per rib or as a full triple rack.
