How to Make Indulgent Apple Cinnamon (Or Should We Say Sinnamon) Rolls

Many people have used the quarantine as a chance to practice their baking. That’s why our feeds have lots of drool-worthy photos and videos of their creations. One common dish that we’ve been seeing lately includes the cinnamon roll— a sweet pastry that’s oozing with butter and sugar.

Once you bite into a cinnamon roll, you will find more sugar and cinnamon nestled within the folds. It’s tasty, comforting, and sweet. Plus, it’s easy to make once you get the hang of it.

To add a twist (pun intended) on this classic, food blogger Shy-Ra Francheska Dabocol (IG: @gastronomissph) includes apples in her recipe. A cross between an apple pie and a cinnamon roll, this fruity pastry is both sinful and indulgent.

Apple Cinnamon Rolls Recipe

Ingredients

Dough

  • 2 and 1/4 tsp of dry yeast
  • 1/2 cup of water
  • 1/4 cup of whole milk
  • 1/4 cup of granulated white sugar
  • 2 and 3/4 cup of all-purpose flour
  • 1 tsp of salt
  • 2 tbsp of unsalted butter, melted
  • 1 large egg

Cinnamon Sugar

  • 2/3 cup of brown sugar
  • 1 and 1/4 tbsp of cinnamon powder
  • 1 tsp of vanilla extract
  • 1/4 cup of butter, softened

Apple Cinnamon Filling

  • 2 small red apples, peeled and diced
  • 1 tsp of cinnamon powder
  • 2 tbsp of brown sugar
  • 1/2 cup of water

Vanilla Glaze

  • 2 tbsp of milk
  • 1 and ½ cups of confectioner’s sugar
  • ¼ cup of butter, melted
  • 1 tsp of vanilla extract

Procedure

Cinnamon Sugar

  1. Mix the brown sugar, cinnamon, and vanilla extract in a clean and dry bowl. Set aside.

Vanilla Glaze

  1. In a bowl, mix your confectioner’s sugar and melted butter together. Add your vanilla extract and mix with a fork until well-combined.
  2. Add a tablespoon of milk and mix. If the glaze feels too thick, add another tablespoon of milk until it becomes silky.

Apple Cinnamon Filling

  1. Get a saucepan going on medium heat. Add your brown sugar, cinnamon, and water. Mix until your sugar is dissolved.
  2. Add your diced apples and mix until the apples are soft and well-coated in the mixture.
  3. Drain the excess syrup. You can store this in the fridge and use it for other recipes. Set your apples aside and let them cool.

Dough

  1. Preheat the oven to 190C.
  2. Prepare your yeast mixture by adding your milk and water in a microwave-safe bowl. Heat in the microwave for 30 seconds.
  3. The mixture should be about 42 to 45C. Transfer it in a big bowl, then add a teaspoon of white sugar.
  4. Add your yeast and whisk lightly. Set aside for 7 to 10 minutes. Make sure to keep an eye on your yeast. Once the mixture becomes frothy and has risen to about an inch high, it’s ready.
  5. In a separate bowl, sift your flour and salt. Whisk until combined.
  6. When your yeast has successfully activated, pour in your warm melted butter in the bowl with the yeast. Add your remaining sugar and whisk.
  7. Add your egg and whisk until well-incorporated. While mixing, gradually add the flour. Save some for kneading later.
  8. Once the mixture gets lumpy, change to a wooden spoon and mix until slightly firm.
  9. Transfer the dough to a clean and sturdy surface, sprinkle on some flour, and knead it. When it starts sticking, add flour and keep working the dough until it becomes elastic.
  10. When it starts sticking, add some flour and keep kneading until the consistency is elastic.
  11. Transfer the dough to a bowl. Cover the bowl with a cloth, then leave it for an hour until it rises and doubles in size.
  12. When ready, line your kneading surface with flour. Take out the dough, and roll it to form a rounded rectangle that is a quarter of an inch thick.

Assemble and Cook

  1. Spread softened butter all over the dough, then sprinkle the cinnamon sugar evenly over it.
  2. Place your apple cinnamon filling onto the dough and spread evenly.
  3. Roll your dough tight, starting from the shorter side until you form a log. Cut evenly by marking the center with your knife. Make divisions on your log, each one 2 inches thick.
  4. Use dental floss to cleanly cut through the dough. After cutting the rolls, place them on a baking pan, and make sure to leave ample space in-between.
  5. Cover with plastic and wait for 45 minutes to 1 hour for the pastry to rise. Once they double in size, slather the top with melted butter.
  6. Bake in your preheated oven for about 15 to 20 minutes or until the tops are golden brown. Let your apple cinnamon rolls sit for 5 to 7 minutes, then drizzle your vanilla glaze over them and serve. Enjoy!
