The star of the table that night was OLIC’s SISIG, though! They prepared it the way authentic Kapampangan Sisig is prepared – without eggs as a topping. The kick of spice is what we really loved in their version of this Kapampangan dish. Plus, the chef said that this is the most challenging dish to do from their menu. He said that it takes a lot of practice and skills to perfect their way of cooking sisig.
