Bahay Kubo

Black Sheep’s signature dish has ALL of the vegetables in our famed Bahay Kubo song combined in it. You may think it’s weird, but surprisingly, it works! I especially liked the ground peanut and eggplant that represented the soil on the plate.

We had another surprise: a glass of champagne to while away the time.

Kitayama Smoked Beef Brisket and “Batuan” Bone Marrow, Heirloom Rice from Cordillera

For the “farm” section, our main course was an enjoyable meal. The beef is super soft, juicy and flavorful. The Heirloom Rice, on the other hand, is ‘salty, but not really.’ It’s not a bad thing, though. I just found myself in a state of debate on whether it’s really salty or not. The pairing went well, though – so far the best dish in the lineup!

Mint Candies

To prepare us for the sweet ending, we had some mint candies. The center has a burst of jelly that will surprise your tastebuds.

Banana Tart (Banana munchkins, butter beer, cashews)

And finally, this Banana Tart is quite unexpected. This dessert is not too sweet and is cool in the mouth. The clash of hot (munchkins) and cold (ice cream and butter beer mix) is a match.

Truffle, macaron, dulce de leche, coffee vodka

For the last surprise, they served this dessert plate. The truffle, which looks liked polvoron, is kind of garlicky, the macaron bittersweet (in a good way), and the Dulce de Leche has a nice burst of caramel inside that matches the cocoa outside. The coffee vodka is light.

Black Sheep sources their ingredients as much as possible locally, which is a nice thing. Chef Jordy Navarra wanted to put the elements of being Filipino and being different from the others, as well. If you’re up for an incomparable fine dining experience, I must say that visiting Black Sheep is a must.
