Wishbone: The First Wings Place in Kapitolyo

Wait a minute. I just drove by a wings place by Estancia…

Sure, but that’s already part of Oranbo, a far cry from the cozy local foodie hub we all learned to love. From the dedicated couple who brought us the tear-jerking affordability and goodness of Pomodoro Pizza, they have teamed up with a friend to open Wishbone, an American-slash-Cuban experience with obvious hints of Pinoy sprinkled on every dish.

And as expected, their wings are the main attraction. Freshly cooked per order, the selection on the menu varies from familiar flavors like the semi-sweet Teriyaki Chicken to the more adventurous such as the best-selling Salted Egg and Srirachamansi.

Don’t be fooled by this crowd favorite. Oddly enough, a salted egg puree adds an addicting accent that goes best with a cold bottle of Pale Pilsen (which is also available). And even with a brew at hand, you’d be tempted to go all-out Pinoy and order rice.

Imagine a zesty version of your favorite hot sauce; hints of calamansi mingling with the semi-sweet spiciness of the Sriracha slathered all over juicy morsels of freshly fried wings. (Hungry yet?) Try their Srirachamansi for that kick.

And if you insist on rice, go the extra mile and order their Dirty Rice which changes your perspective of the carbohydrate. Mixed with bits of chicken liver and bell pepper, this offered side is practically a meal on its own and goes well with anything.

Another first of its kind in Manila, Wishbone also boasts of its Cubanos. Inspired by the same buttered and grilled Cuban sandwiches from the movie, Chef (Jon Favreau, John Leguizamo), the great people behind the wings place decided to make it a reality and place it on the menu.

Although unassuming, the Classic Cubano is far from simple once your jaws take hold of it. With just a swipe of mustard, the sandwich holds generous servings of homemade spiced ham and succulent 4-hour roasted pork, all freshly cooked daily.

If you’re really into Persian fare, do try their Kebab Burger which is a practically a beef kebab rolled into a humongous patty that overflows from their customized bun. I say “customized” because each bun is handmade to complement a particular sandwich.

Wondering what your kid might like apart from wings? Wishbone’s Sloppy Joe is made of 100% beef and has hints of sweetness topped with a melted cheese sauce. It’s also really fun watching people trying to eat it the neatest way possible.

Other bestsellers include their Chori Burger, hefty and breakfast-inspired reminiscent of Boracay’s beloved sandwich. Complete with a poached egg, this burger is a complete meal on its own and we’ll be sure to try it next time we visit.

With it stark white walls, its gray and red metal accessories, and upcycled wooden appliques, Wishbone has maximized its tiny interior into a space where friends, families and lovers can converge over great food and cold beer. Sandwiched in between The Round Table and Tomahawk, Wishbone is still a new face in East Kapitolyo but already, its possibilities with its selection are already growing.
