It is a known fact that Kapampangans are probably the best among the regional cooks. And I know this for a fact because I grew up in Pampanga myself.  I was actually able to try out the original halo-halo of the original Razon’s in Guagua, Pampanga. More than a decade and a half ago, my mother who was already then a fan of Razon’s halo-halo and pancit luglug brought us to the first location of Razon’s in an obscure village within the small town of Guagua. I remember that eating my first Razon’s halo-halo was a eureka experience! I never looked at halo-halo the same way after that day. And so imagine my joy when I started seeing Razon’s of Guagua opening up so many stores around Metro Manila. And it’s not surprising to see Razon’s of Guagua prosper really quickly because they do serve the best halo-halo in Metro Manila.

The best halo-halo in Pampanga is now the best halo-halo in Manila (and soon the entire country)! 

 

 

Last week, together with a few friends, I visited the Greenhills branch of Razon’s of Guagua. Roman Razon Baltazar (who prefers to be called RB), Vice President of Razon’s Food Corporation (RFC), welcomed us into the store and told us more stories about Razon’s of Guagua while we were waiting for the special dinner which he’d  like us to try. He told us that while many Filipinos thought that the halo-halo was brought by the Japanese in the 1940s, the ancestors of RB had already been making halo-halo. The secret of their relatives why their halo-halo still survives after almost a century? They’ve been preparing (not just buying from other stores) the halo-halo ingredients themselves! They use real macapuno, have their own supply of milk, and have secret recipe for the leche flan topping. Everything about their halo-halo was a product of perfect blending unlike other halo-halos which feel strangely confusing because of incompatible ingredients. No wonder Razon’s of Guagua‘s halo-halo is a popular refreshment after almost a century of the first Razons who perfected the ingredients to come up with the halo-halo we all enjoy today.

But more than just their already perfect halo-halo, RB surprised our group with most succulent dinner we’ve all had in a long time. He served us some of the popular Kapampangan dishes that Razon’s of Guagua is proud to offer. 

 

First up is the most popular Filipino pulutan (and for me it’s the best Kapampangan food of all time): the Sizzling Sisig!

Their sisig is unlike other sisigs being served in other restos or bars. They use the authentic pig’s inner parts for their sisig. This is why Razon’s of Guagua‘s Sizzling Sisig is crunchy and definitely waaaay better than the other sisigs in town.

 

Craving for some beef? You have to try their Sizzling Bulalo. This authentic Kapampangan dish is different from your normal bulalo because it’s served in some sizzling savory gravy.

I’m already aware of these two yummy dishes from my previous visits in Razon’s of Guagua. There were a couple of surprising delicious dishes served to us as well: their very unique tomato-based Chicken/Pork Asado and crunchy Lechon Kawali are definitely among the must-try dishes in your next visit to Razon’s of Guagua.

After two hours of stories and authentic Kapampangan food, my friends and I were stuffed and felt as if we just experienced a filling Kapampangan fiesta.

And even without any Kapampangan bias, I thought that that dinner we had at Razon’s of Guagua easily beat all the other dinner experience I had in the next few days. I missed their crazy delicious food that I went back to Razon’s of Guagua Greenhills branch twice after that dinner!
