Meatslut: Meat Done Well

Meat Slut

Where can you find the best yet surprisingly affordable steaks in the Metro? It is in Marikina. There. Done. That is the entire review ala TL:DR (too long, didn’t read). If you want to find out why, though, read along.

Every now and then, there will be this new restaurant that tries to break out and capture your imagination; but sadly more often than not, they will just miss the mark and fall flat on their face. It will be either too expensive for a normal diner or too compromised for a picky eater; but what do we have here?

Meat Slut

Located in Marikina, Measlut offers a concept of high quality meat at mainstream prices that even a struggling millennial will be able to afford. Don’t let the road side restaurant fool you with its relaxed atmosphere ala mom and pops dinner as they serve some of the best meats in the metro with very sophisticated techniques. I’ve tasted some of them and Measlut is high on that list.

And no, they don’t serve regular steak house food. From the get-go, we were served cured beef with pickled celery and crème fraîche mustard (Php220), a perfect appetizer with sweet beef and the sourness of pickled celery to whet the appetite.

Their fresh oysters with cheese and red caviar (Php280) are an excellent starter for those who are new to eating fresh oysters. The cheese, lump fish caviar and pickled celery mask the flavor of the oysters yet give a sudden burst of seafood freshness.

The Crispy Cloud of Joy (Php180) from their nose-to-tail selection involves deep fried calves’ brain with lump fish caviar and a poached egg dip.

So, what separates Measlut from the rest? Firstly, they sous-vide (a French cooking technique involving a vacuum placed in a thermally-controlled water bath for a period of time to ensure that the food is cooked thoroughly yet retains its moisture) their meat at a constant 54ºC at a set time to ensure that the meat is cooked and tenderized, while retaining its flavor, moisture, and nutrients.
