When in Manila, there’s a new place in town, and if you’re not much into the clubbing scene (like me) and would prefer to just sit down and enjoy a few drinks with friends (again, like me)—head on over to Pablo’s Pub and Restaurant, located on the second floor of the Forum Building along 7th Avenue and Federacion Drive in Bonifacio Global City. (It’s just a little past NBC Tent and Fort Strip.)

A brief history on Pablo’s PubPablo is a Spanish name that comes from the Latin word “little.” Inspired by the many private men’s clubs that inhabited London in the 19th century, it lends itself out as a modern appendage—with clean yet inviting surroundings and classic interiors that incorporate contemporary typography. Filled with leather booth seats and a mix of light and dark-paneled walls, all hidden between gaps of its windows’ wooden blinds, my favorite is how the narrow hallway ends with a bookcase that leads to a secret room called the Glenlivet Boardroom.

Pablo’s Pub and Restaurant revels in being the home to the best single malt whiskeys. They even have whiskey lockers for guests to rent, and offer a range of single malt brands that include the Glenlivet and Jameson Irish Whiskey.

The team behind Pablo’s Pub is composed of sibling tandems, Atty. Nicolo and Nathania VilloncoJam and Joy Mabanta, and Miguel Escueta of internationally-recognized band, the Morning Episodes.

With the extensive lineup of whiskey brands on their shelves, Pablo’s Pub has curated a menu to pair with their drinks—all overseen by Miguel Escueta, who’s pride and joy are Pablo’s Pub Half Pounder—grilled to tender extremes and layered with American cheddar and fresh vegetables, served with Pablo’s Smoked paprika fries, and the Escobar—a 1-inch thick US Angus Rib Eye Steak weighing in at 4oo grams, served with mashed potatoes and buttered vegetables.

If you’re looking to have a delicious and quiet dinner followed by a couple of good drinks with friends, Pablo’s Pub and Restaurant definitely serves as a humble solace from the daily grind.
