Speck and Goat Cheese Mousse (YOU MUST TRY THIS!)
Words are not enough to explain how good this is – truffle scent, smoked ham, goat cheese and apple mustard chutney
Roasted Bone Marrow with toasted bread and salsa verde
Just a warning: this is sinful!
Foie Gras Ballotine with a slice of duck ham and caramelized orange
Potato Gnocchi with black truffle, creamy cheese sauce and prosciutto
(I think this is best for sharing since this dish is very filling)
Braised Lamb Shank with mashed potatoes and baby vegetables
Pistachio Crusted Black Cod Fish with carrot pudding, red onion and chocolate marmalade in saffron sauce
Among all the main dishes, I believe this is the best seller.

From The Grill: Dry Aged Rib Eye for two with a side of duck fat fried potatoes and topped with seared foie gras
Dash a generous amount of those bacon bits to enhance the flavor
Before being overwhelmed by the main courses, better save room for the desserts because Madison’s Bistro Moderne serves some of the most amazing desserts in metro manila 🙂

Warm Peanut Butter and Chocolate Fondant
with salt caramel and chantlily
Sinfully good. We’ve cleared the plate in less than 2 minutes.
Madison’s Deli is just beside the restaurant – almost everything is made by them. They make their own sausages and dry-age their own steaks.
