What happens when you add yummy to delicious? You get YUMMILICIOUS!!!! Ok…. that was kinda gay…. but what I’m trying to say is that this place called HalfMoon Asian Cafe has brought two different desserts and combined them into one AWESOMETACULAR treat called: The BibingCrepe!!
So most people know what a crêpe is, right? Well just in case you’ve been in a cave the past 20 years, a crepe is a type of very thin pancake. The word is of French origin, deriving from the Latin word crispa, meaning “curled.” Crêpes are served with a variety of fillings, from the most simple with only sugar to extravagant chocolates, fruits, sweets and more.
A bibingka on the other hand, is a Filipino treat. It’s a rice cake that’s also similar to the pancake. I honestly have no clue how else to describe it… but found this article from pinoycook.net that says “Bibingka is made from galapong, baked in a special clay pot, lined with a piece of banana leaf, with live coals on top and underneath. It is topped with slices of kesong puti (white cheese) and itlog na maalat (salted duck eggs). The newly-cooked bibingka is spread with butter and sometimes sprinkled with sugar then served with niyog (grated coconut). Galapong is glutinous rice soaked in water then ground with the water to form either a batter or a dough, depending on what the cooked dish is supposed to be.”
So there you have it… two similary… yet very different dishes… COMBINED!!
At the moment, Half Moon Asian Cafe has five different BibingCrepe variants available —Cheese, Chocolate, Choco-Cheese, Corn-Cheese and Choco-Mallows.
I can go on with senseless jibberish on how cool and yummy this is…. but honestly, just watch the video and head down there yourself!!! Do prepare for a sugar-high like no other if you get the Choco-Mallow BibingCrepes!!!

my first date with my now boyfriend is with this dessert. which he called it a pancake and i keep on telling him it’s a bibingka. we only had it twice in SM the block and so sad that they said it was their last day. but the greatest memory of our first date will always be this one which he continuesly say.. it’s a pancake. =) we love it so much. thanks half moon!
