COVA Tapas Y Sangria has been around since 2011 and always has frequent diners, thanks to its main attractions of tapas and sangria.  For a while, you can even pretend to be dining inside a cave what with the impression that you’ll get from its modern interiors beneath a wooden slats designed ceiling. 

 

 

 

We started with Queso Frito (P280), all cheesed up with gruyere, caramelized onions and topped with organic honey. It was a great way to bring on our appetites.

 

 

 

The delicious Huevos Cabreados (P380), currently their bestseller, was the next dish consisting of fried eggs, shoestring and chorizo.

 

 

Fresh beef tenderloin, Tartar de Toro (P450) with pippara, chives, migas and a fresh egg yolk was equally delicious. 

 

 

Also served on the table was the catalan style Arroz Negro (P600 or P1000), black rice with squid ink, shrimps, mussels and soft shell crab. Even though their version of Arroz Negro doesn’t have any squid in it, it still has that distinct delicious squid ink taste. 

 

 

There is nothing more invigorating than a Spanish Tortilla de Patata or in this case it’s Tortilla de Cova (P380). It is the perfect dish to match with their Sangria. On that note, COVA Tapas Y Sangria also serves unlimited Sangria. This place would be the perfect choice for customers who are more attracted to intimate bar settings as opposed to more commercial ones.
