The awesome tapas bar was conceptualized by the young owners themselves – Patrick Hesse and Tatyana Guevara, with Luigi Tabuena executing his creativity and unique design.

Patrick and Tatyana met in Enderun as college buddies and then went to Barcelona to train. Having experienced the Spanish bar scenes in Barcelona, they decided to bring the culture here by opening Cova – a bar with a Spanish flair.

 

Once you step in, you will feel that you are instantly brought to Spain – from the lovely music to the food and drinks.

SANGRIAS!!! Everyone’s gotta try Cova’s famous sangrias. They only use premium quality Spanish wines and these are freshly made every day – tan refrescante!

Summer Peachy White Wine Sangria (Php 895 for 1 liter)

 

Who would have thought that Sauvignon Blanc could be a great base for a sangria? This innovation is created by no other than Tatyana herself.

Cap | Pota 

 

This was really good, almost like callos but a little spicy. Cap | Pota contains ox tripe, cheeks, jamon, blood sausage, tomato, sultanas, raisins and crunchy pine nuts.

Some partner this with rice but we liked ours with a nice slice of toasted bread. – YUM

Ravioli de Rabo de Toro – Patrick’s favorite dish in Cova.

He wanted to serve ravioli with different textures by pan-searing the pasta dough like what we do with gyoza dumplings and then filling it with ox tail, foie gras and shitake mushroom. Cova’s ravioli was served with two sauces – balsamic glaze with a bit of truffle oil and ox tail jus. Sounds complicated? It was very rich but interesting. Try it so you’ll know what it tastes like.

Calamares Tintados (Php 260)

 

Cova did a really good job in making their calamares. It was pretty cool to have the light and crispy batter with beer and squid ink – perfect with the alioli (Spanish garlic mayo).

This is probably the best Spanish dish in Cova for a good night’s drinking session. The big plate is full of crispy hand cut shoestring potatoes mixed with a fried egg and tasty crisp chorizos – perfect pulutan indeed!

Crema Catalana (Php 200)

 

For the sweet tooth, Cova also serves desserts. They take pride in serving a famous Spanish dessert – Crema Catalana, which is very much like a crème brulee infused with fresh fruits and cinnamon.

What’s more: Cova also serves ice-cold specialty craft beers; and, just recently, they added La Fin Du Monde of Unibroue to their menu. “It is considered to be the world’s best Tripel-style Golden Ale. To this date, La Fin du Monde has earned many medals and awards, including some of the world’s highest honors. Also available is the Stone Ruination IPA, a perfectly strong IPA for beer lovers.” CHEERS!

But, if you come here to impress a date, you have to order Cova’s Specialty “Millionaire Sangria.” The citrus drink is made extra special with strawberries, basil and an expensive Cava (Spanish sparkling wine). We had it and we loved it!
